Ingredients

For the salad
  • 4 medium beetroots, peeled and cut into wedges
  • 2 ripe pears, sliced
  • 100ml Pedro ximenez sherry
  • 150g feta cheese, crumbled
  • 1 can of butterbeans, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 100ml extra virgin olive oil
  • 2 tablespoons hazelnuts, toasted and roughly chopped
  • 2 tablespoon honey
  • Salt and pepper, to taste
  • Baby herbs, for garnish
