Ingredients

for the stew
  • 250g chistorra sausages, sliced
  • 1 lrg squid tube, cleaned and diced into small pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 500ml good quality red wine
  • 1 can chopped tomatoes
  • 400g fish or chicken stock
  • 1 small tin cooked beans (borlotti, fabes or cannelini)
  • 2 tsp smoked paprika
  • 1 tsp fresh thyme
  • 1/2 tsp chili flakes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
